Julian has over 10 years’ experience working in restaurants both in the UK and across Europe. The turning point for Julian was working a stage at Tickets in Barcelona, as he draws inspiration from Albert Adria chef patron of Tickets, this was a hugely exciting opportunity. Julian then returned to Suffolk where he worked in a number of restaurants and pubs, bringing a modern influence to traditional English pub food. Julian is now based at the Grazing Sheep in Ipswich where he features his pop up tapas, combining traditional tapas with modern cuisine techniques to create a fresh and exciting culinary experience.
He is inspired by travelling and submerging in different cultural cuisines while learning the influence that the classical French techniques has on the local food.
He is an active researcher of food trends and recipes by reading books, watching cooking documentaries and visiting other restaurants however that doesn’t stop him from evolving his own technique as a chef!
